Easy Healthy Dinners: White Fish, Peppers, Salad and Sweet Cheese

Today’s easy healthy dinner idea combines two dishes, the main, a fillet of white fish ( low in fat and high in protein) in this case it’s fresh cod but it works also with hake or halibut (pick your poison), and some fried green peppers, these ones are the “padron” variety, which are very delicate in flavour. The side dish is a green salad with spring onion and tomato and for dessert, a mini soft fresh cheese with sugar free strawberry jam.

It is more assembling that actually cooking, but I have been told so often that people cannot think of dinners that don’t include pasta, potatoes or rice, that I thought this was worth sharing.

How to make it? Simply pan fry the fish, sprinkle with salt and lemon juice. Fry the peppers in half a cm of olive oil and let the oil drip on to some kitchen paper before serving. Arrange salad to taste, dress with a bit of olive oil, salt, and white wine vinegar. Those cheeses are sold like that, if you can find it, some cottage cheese will do nicely, just add some store bought non added sugar strawberry jam.
